Quick and Easy Greek Pasta Salad Recipe for Summer DelightS

Ingredients:

  • 1 16oz box of orzo pasta, cooked and drained
  • 1/4 – 1/2 cup rice vinegar (based on preference)
  • 1/2 cup kalamata olives, chopped
  • 1/2 cup sun-dried tomatoes (with the oil), chopped
  • 1/4 – 1/2 cup pepperoncini peppers, chopped
  • 1 can drained and rinsed chickpeas (pre-soaked in pepperoncini juice while pasta is cooking)
  • 1 bell pepper, finely diced (use whatever color you prefer)
  • 1/2 a red onion, finely diced
  • 1-2 handfuls of spinach, chopped
  • 1/4 cup fresh basil, chopped
  • Salt, pepper, and garlic powder to taste
  • Optional: Vegan feta cheese

Instructions:

  1. Cook the orzo pasta according to the package instructions. Once cooked, drain and set aside to cool.
  2. In a large mixing bowl, combine the cooked orzo pasta with rice vinegar. The amount of vinegar can be adjusted based on personal preference for acidity.
  3. Add in the chopped kalamata olives, sun-dried tomatoes (along with the oil), pepperoncini peppers, chickpeas, bell pepper, red onion, spinach, and fresh basil.
  4. Season the salad with salt, pepper, and garlic powder to taste. Mix well to ensure all ingredients are evenly coated with the seasoning.
  5. For an added burst of flavor, consider crumbling some vegan feta cheese over the salad.
  6. Once everything is mixed together, chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld together.
  7. Serve and enjoy this refreshing Greek pasta salad as a standalone meal or as a side dish alongside grilled meats or seafood.
